Beer Batter
Beer batter is great for battering everything from classic fish and chips and onion rings to delicate Japanese tempura vegetables. Just coat whatever you like and deep fry.
- 300g (10 oz) plain flour
- 1 ½ tsp baking powder
- 1 tsp salt
- ½ tsp pepper
- 2 eggs
- 500ml (½ pint) beer
- Sift the flour into a large bowl, and mix in the baking powder, salt and pepper. Make a well in the centre of the mix and break in one egg at a time, whisking until absorbed. Then gradually add the beer, whisking constantly to form a smooth batter.
