Chinese Beer Chicken

Some people eat a hot curry and drink a beer with it. Why bother? With Chinese Beer Chicken you can get two-in-one. Serves 2.

  • 2 chicken breasts
  • 2 spring onions, finely chopped
  • 2 tbsp soy sauce
  • 2 cloves garlic, finely chopped
  • 2 tsp dried chilli
  • 2 tsp ginger, chopped
  • 1 tsp cornflour
  • pinch of sugar
  • 200ml beer (plus a little extra)
  1. Mix half the garlic, the soy sauce, cornflour and a dash of beer and marinate the chicken in it for at least a couple of hours. Cook the rest of the garlic, the spring onion and the ginger in a little oil until they begin to soften, then add the chicken to stir-fry. When it begins to cook, add some more soy sauce and the sugar, and when that’s evaporated, pour over the beer. When that’s evaporated too, you’re done. Serve with rice.
