Harvey Wallbanger Cake

All of the people who’ve ever looked at the drink in their hand and thought “Hey, this is great and all, but what would make it really special is if it was a cake,”—this one’s for you. To make it easier we’ve used ready-made cake mix, but feel free to bake from scratch.

  • 500g (18 oz) yellow cake mix
  • 350g (13 oz) vanilla instant pudding mix
  • 1 cup oil
  • 4 eggs
  • 200ml (¾) cup orange juice
  • 75ml (¼ cup) Galliano liqueur
  • 75ml (¼ cup) vodka
  • For the glaze:
  • 130g (4 ½ oz) sifted icing sugar
  • 1 tbsp orange juice
  • 1 tbsp Galliano
  • 1 tsp vodka
  1. Preheat the oven to 180C/350F/Gas Mark 4. Mix all the ingredients together (preferably in a mixer at medium speed for several minutes. Grease and flour a cake tin, either a bundt (doughnut-shaped tin) or a round one, and pour the mix into it. Bake for 45-50 minutes.
  2. For the glaze, mix the icing sugar, remaining orange juice, Galliano and vodka, and spoon this over the warm cake.
