Rum Coffee Risotto
Don’t be afraid of this recipe—it’s quite special. Instant coffee is actually an excellent ingredient in dishes, particularly in one’s more impecunious times—and when poor, what else would one be buying but booze? Serves 2-4.
- 2 tbsp instant coffee granules
- zest and juice of one orange
- 150g (5 oz) arborio rice
- 1 litre (2 pints) milk
- 2 drops vanilla extract
- 150g (5 oz) sugar
- 4 tbsp butter
- 300g (10 oz) double cream
- 6 tbsp rum
- Mix the coffee granules and orange juice in a saucepan with 125ml (½ cup) of water and bring to the boil. Immediately remove from the heat and stir in the rice. Soak for 5 minutes then return to the heat and stir in the milk and vanilla extract. Cook over a low heat, stirring constantly, until the rice is tender but al dente. Remove from the heat, stir in the orange zest, butter, cream, sugar and rum, and serve.
