Frozen Margarita Pie
All the ingredients of a fine margarita go into this pie, which doesn’t require any baking. Leave plenty of time for it to freeze, however.
- 75g (3 oz) pretzel sticks, finely crushed
- 150g (6 oz) sugar
- 125g (4 oz) butter, melted
- zest of 1 lime
- 125ml (½ cup) fresh lime juice
- 1 tin (400g / 14 oz) sweetened condensed milk
- 280g (10 oz) whipped cream
- 2 drops green food coloring
- 12 mini pretzels or thin pretzel sticks, for topping
- 4 lime slices, very thin and halved, for topping
- 2 tbsp gold tequila
- 2 tbsp triple sec
- Mix the crushed pretzels, sugar and butter in a medium bowl. Press the mixture firmly into a buttered, 22cm (9 inch) pie dish and chill in the fridge for an hour. Meanwhile, combine the lime zest, juice, condensed milk, tequila and triple sec in a bowl, and fold in 1/3 of the whipped cream, and the colouring. Pour this mixture into the pie crust and freeze for at least four hours. To serve, top with the rest of the whipped cream and scatter with pretzels and lime slices.
