Tequila Marinade
This marinade is perfect for barbecues—slap it on your meat at least a couple of hours before cooking, and preferably the night before, and leave in the fridge. Makes enough to coat 1 ½ to 2 kilos (3-4 lbs) of beef steaks or similar.
- 2 tbsp sesame oil
- 2 tbsp Dijon mustard
- 1 tbsp balsamic vinegar
- 2 cloves garlic, crushed
- 1 tsp salt
- 1 tsp black pepper
- 3 tbsp tequila
- Mix all the ingredients together in a bowl. Add the meat and coat well, then seal the lot in a container with a lid or a tightly-wrapped bag.
