Pepper Vodka Chicken
Pertsovka is the Russian name for pepper vodka. Vodka itself means ‘little water’—not so little in sufficient quantities. This dish has a good kick—you can replicate it with regular vodka and a good couple of teaspoonfulls of Tabasco.
- 1 whole chicken
- salt & fresh ground pepper
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 small carrot, peeled and sliced into ¼” coins
- 1 bunch fresh thyme
- 80ml (1/3 cup) pepper vodka
- Preheat the oven 230C/450F/Gas Mark 8. Cut the chicken into pieces: thighs, drumsticks, wings and halved breasts. Season with salt and pepper, and cook in the olive oil for a few minutes in a large pot over a medium-high heat. When nicely brown, pour the vodka over and light. When this burns, add the onion, carrot and thyme, stir , and place in the oven.
- Roast for 30-45 minutes until the chicken is fully cooked.
