Watercress Salad With Tequila Tangerine Dressing
This is a simple little salad given an extra tang by the introduction of the world’s finest agave-based spirit.
- For the dressing:
- 65ml (¼ cup) fresh tangerine or orange juice
- 65ml (¼ cup) vegetable oil
- 2 tbsp fresh lime juice
- 2 tsp honey
- 1 clove garlic, crushed
- salt and pepper to taste
- 2 tbsp tequila, preferably gold
- For the salad:
- 3 large bunches watercress, with the stems removed
- 2 tangerines or 1 small orange, peel and divided into segments
- 75g (3 oz) radishes, thinly sliced
- 55g (2 oz) spring onions, finely chopped
- Mix all the dressing ingredients in a bowl and allow to sit for a while to blend. Then, in a large salad bowl, toss the watercress and half the dressing together, then add the other ingredients. Serve with the other half of the dressing on the side.
