Watercress Salad With Tequila Tangerine Dressing

This is a simple little salad given an extra tang by the introduction of the world’s finest agave-based spirit.

  • For the dressing:
  • 65ml (¼ cup) fresh tangerine or orange juice
  • 65ml (¼ cup) vegetable oil
  • 2 tbsp fresh lime juice
  • 2 tsp honey
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • 2 tbsp tequila, preferably gold
  • For the salad:
  • 3 large bunches watercress, with the stems removed
  • 2 tangerines or 1 small orange, peel and divided into segments
  • 75g (3 oz) radishes, thinly sliced
  • 55g (2 oz) spring onions, finely chopped
  1. Mix all the dressing ingredients in a bowl and allow to sit for a while to blend. Then, in a large salad bowl, toss the watercress and half the dressing together, then add the other ingredients. Serve with the other half of the dressing on the side.
